Remove the corn cobs and discard. Strain the corn-flavored water through a fine-mesh sieve or cheesecloth into a clean pot, pressing solids to extract all liquid.

Add the powdered pectin to the corn-infused water and stir well. Bring to a rolling boil over high heat, stirring constantly.

Add sugar and juice of one lemon to the boiling mixture. Stir until sugar is completely dissolved.
