  1. Begin by heating 2.5 gallons of water in a large stockpot over medium heat. Once the water reaches around 150°F (65°C), remove the pot from the heat.

  2. Add the caramel/crystal malt to a muslin bag and place it in the hot water. Let it steep for about 20-30 minutes.

  3. Remove the muslin bag and bring the water to a gentle boil. Once boiling, turn off the heat and stir in the pale liquid malt extract until fully dissolved.

  4. Return the pot to the heat and bring the mixture to a boil. Once boiling, add the Centennial hops and let them boil for 45 minutes.

  5. After 45 minutes, add the Cascade hops to the pot and boil for an additional 10 minutes.

  6. Turn off the heat and add the Citra hops for aroma. Let the mixture sit for 15 minutes before cooling it down rapidly using an ice bath.

  7. Transfer the wort (unfermented beer) to a sanitized fermenter, then top up with cold water to reach the 5-gallon mark.

  8. Pitch the dry ale yeast into the fermenter and seal it with an airlock. Store the fermenter in a cool, dark place with a consistent temperature for about 2 weeks.

  9. After the fermentation is complete, prime the beer with sugar by dissolving the priming sugar in boiling water and adding it to the beer.

  10. Bottle the beer in sanitized bottles and let it carbonate for 2-3 weeks.

  11. Chill the beer, then pour it into a glass, allowing the hoppy aromas to greet your senses as you take the first sip of your homemade IPA.
